“Old Fashioned” Brown Sugar Fudge (Penuche)

3 cups Light Brown Sugar
1 cup Heavy Cream
2 Tbsp Unsalted Butter
1 tsp Vanilla Extract
1/4 tsp Salt
Directions
- Line 8″ to 9″ square glass baking dish with parchment or wax paper.
- In a medium saucepan, combine all ingredients.
- Bring saucepan to a boil over med/high heat, stirring often.
- Reduce heat to med/low and continue heating ~5-8 minutes until mixture is about 234 degrees F. (*See note for “soft-ball” method)
- Remove from heat and let stand for about 35 minutes
- Stir, using a wooden spoon, until light brown and no longer shiny (about 6-10 minutes)
- Transfer to the lined baking dish, spread evenly, and let sit for 1 hour
- Cut into 1″ cubes before serving. Store in an airtight container at room temperature for up to 1 month.
Notes
- “Soft-Ball” is a sugar stage where a small amount of mixture dropped in cold water will form a soft pliable ball. This will indicate a sugar mixture between 235 and 240 degreed F.
