Chocolate, Raisin, and Almond “Cow Pies”

Ingredients

  • 2 cups (12 oz) Milk Chocolate Chips

  • 1 Tbsp Vegetable Shortening

  • 1/2 Cup Raisins

  • 1/2 Cup Chopped Almonds

Directions

  • Prepare a baking/cookie sheet with parchment or wax paper.
  • In a double boiler, melt the chocolate chips and shortening, stirring often until smooth. (*See note about microwave method)
  • Remove from heat, and stir in the raisins and chopped almonds.
  • Drop by spoonful onto the prepared baking sheet.
  • Refrigerate or freeze for 1 hour, or until hardened, before serving.
  • Store in an airtight container in the refrigerator for up to 1 month.

Notes

  • *For a faster cooking time, you can microwave the chocolate chips and vegetable shortening in a microwave-safe bowl in 30 second bursts, stirring between each time. Do this until most of the chips have melted. There will still be some clumps. Stir until all clumps have melted and mixture is smooth.
